One-Pan Mediterranean Chicken

Made in just one pan, this Mediterranean chicken recipe comes together in less than 30 minutes. Packed with flavor and under 400 calories.



PREP TIME 15 minutes

COOK TIME 30 minutes

SERVES 4


INGREDIENTS

  • 1 pound boneless, skinless chicken breasts, trimmed and sliced

  • 2 teaspoon smoked paprika

  • 2 teaspoons dried oregano

  • 2 teaspoons ground coriander

  • 3 tablespoons olive oil

  • 1 red onion, diced

  • 3 garlic cloves, minced

  • 2 bell peppers, diced

  • 1 can fire-roasted chopped tomatoes

  • 1 lemon, juiced


INSTRUCTIONS


  1. Cut chicken breasts into slices and place in a mixing bowl

  2. Combine smoked paprika, dried oregano, and ground coriander. Pour the seasoning mixture over the chicken in the mixing bowl and coat the chicken evenly

  3. Heat skillet on medium-high heat with olive oil. Once heated, stir in minced garlic, diced red onion, and the diced bell peppers. Cook until peppers and onions are tender, about 5-8 minutes

  4. Add coated chicken strips to the pan and cook until chicken is cooked through, flipping the chicken strips halfway through. Cook the chicken, about 5 minutes per side, or until the internal temperature reaches 165 degrees F.

  5. Once the chicken is cooked through, stir in a can of chopped fire-roasted chopped tomatoes and lemon juice

  6. Let cook for an additional 2-3 minutes and then serve. Enjoy!
