Elevate your breakfast or brunch experience with this exquisite Avocado Toast recipe that harmoniously combines creamy avocado, a perfectly fried egg, sweet honey drizzle, and crispy fried feta cheese.


PREP TIME 5 minutes

COOK TIME 10 minutes

SERVES 1



INGREDIENTS

  • 1/2 ripe avocado

  • 1 slide of whole-grain bread (I use Dave's Killer Bread, 21 Whole Grain and Seeds)

  • 2 oz feta cheese (crumbled)

  • 1 egg

  • 1/4 tsp red pepper flakes

  • salt and pepper, to taste

INSTRUCTIONS

  1. Spray a non-stick skillet with olive oil spray and heat over medium-high heat.

  2. In a circle, add crumbled feta to the skillet. Sprinkle red pepper flakes atop the feta. Fry for 1-2 minutes.

  3. Add an egg to the center of the feta and sprinkle with salt and pepper (to taste). Cook until the egg is fried to your liking.

  4. Meanwhile, toast whole-grain bread. Once toasted, spread avocado onto the toast.

  5. Serve the fried feta egg on top of the avocado toast and then add a drizzle of honey. Enjoy!
