Chicken Zoodle Scampi

This light and refreshing dish brilliantly combine the succulence of tender chicken strips with the crispness of zucchini noodles, creating a wholesome and low-carb alternative to traditional pasta.

INGREDIENTS
1.5 pound of boneless, skinless chicken tenderloins
2 tablespoons olive oil
1/2 cup flour
2 tsp salt, divided
1/4 tsp pepper
1/4 tsp Italian seasoning
3 medium zucchini
4 cloves garlic, minced
1 shallot, minced
2 bell peppers
1/2 red onion
2 tbsp butter
1/2 cup heavy cream
1 cup chicken stock
Juice of 1/3 lemon + lemon zest
1/2 cup parmesan cheese
chili flakes and chopped fresh parsley for garnish (optional)
INSTRUCTIONS
Make a mixture of flour, salt, pepper, and Italian seasoning. Dust the chicken tenders in the flour mixture, lightly coating the chicken.
Add olive oil to a pan on medium-high heat. Add coated chicken strips to the pan and cook until chicken is cooked through, flipping the chicken strips halfway through. Cook the chicken, about 5 minutes per side, or until the internal temperature reaches 165 degrees F. Then, place cooked chicken on the side.
While the chicken is cooking, use a vegetable spiralizer and spiralize the zucchini. Set to the side.
Add the peppers, onions, and butter to the pan. Cook until peppers are tender and onions are turning translucent (about 5 minutes).
Add garlic and shallots and cook for an additional 1-2 minutes.
Then add the chicken stock and heavy cream. Once the sauce starts simmering, add the parmesan cheese, lemon zest, lemon juice, 1 tsp of salt, chili flakes (optional), and the spiralized zucchini. Toss to combine and add the chicken tenders. Cook for an additional 2 minutes to soften the zucchini.
Garnish with chopped parsley (optional) and immediately serve. Enjoy!
