Feta and Sun-dried Tomato Baked Chicken

This feta and sun-dried tomato baked chicken recipe is the perfect weeknight dinner. Under 500 calories with fresh ingredients and leaves you feeling satisfied.

SERVES 4
INGREDIENTS
1 pound boneless, skinless chicken breasts, trimmed and sliced
2 tablespoons olive oil
3 garlic cloves, minced
1/2 onion, chopped
1 teaspoon Italian seasoning
1 teaspoon paprika
salt and pepper, to taste
3 oz sun-dried tomatoes (I use Bella Sun Luci California Sun Dried Tomatoes from Costco)
2/3 cup white wine (I use sauvignon blanc)
3 oz feta cheese
Fresh parsley for garnish (optional)
INSTRUCTIONS
Preheat oven to 375 degrees Fahrenheit
Cut chicken breasts into slices
In your Dutch oven (or oven-safe skillet), heat the olive oil. Once the olive oil is heated, add the minced garlic and chopped onions and sauté until tender and aromatic (about 3-4 minutes).
Add sliced chicken to the Dutch oven. Coat chicken slices with Italian seasoning, paprika, salt and pepper. Sear the chicken on both sides (about 2 minutes on each side).
Add in the sun-dried tomatoes. Once mixed, add in the white wine and deglaze the pan.
Sprinkle feta cheese on top of the chicken. Place Dutch oven in the oven and cook for 10-12 minutes, or until the internal temperature of the chicken reaches 165 degrees (F).
Serve over your favorite side dish (sautéed spinach, pasta, zoodles, rice, etc.). Garnish with optional parsley and Enjoy!
